Applebee's Recipe - Blondie Brownie Applebee's Recipe Variation

The blondie brownie dessert is my favorite Applebee's recipe, so I must share my homemade variation of the popular treat! Nuts can be added (1/2 cup) to the base recipe. I like serving them plain with vanilla ice cream or you can use the icing recipe if you prefer. I've also included a surprise holiday recipe. I make these bars every year during the holiday season to rave reviews!

Vanilla Brownies

1 package (10-11 ounces) white(vanilla) baking morsels
1/2 cup butter or margarine
1 1/4 cup all purpose flour
3/4 cup sugar
1 teaspoon vanilla
3 eggs
(13" x 9") rectangular pan (greased and floured)
Vanilla frosting (optional); see below

Heat oven to 350 degrees. Heat vanilla morsels and butter in a heavy 2 quart saucepan over low heat. Stir the mixture frequently, just until melted. Remove from the heat and stir in flour, sugar, vanilla and eggs. Stir in 1/2 cup chopped nuts (optional). Spread the batter in a 13x9 pan. Bake 30 to 35 minutes or until a toothpick inserted in the center comes out clean. Cool completely before cutting. Spread with vanilla frosting or serve plain with vanilla ice cream (as the Applebee's recipe is served).

Chewy Oat Bars

2 1/3 cups all purpose flour, divided
2 cups rolled oats
1 cup packed brown sugar
1 tsp. baking soda
1 cup (2 sticks) butter or margarine, melted
3 cups semi sweet chocolate chips
1 1/2 cups chopped nuts
1 jar (12.25 ounce) caramel ice cream topping

Combine 2 cups flour, oats, brown sugar and baking soda in a large bowl. Add butter; stir until all of the ingredients are moistened. Reserve 1 cup of this crumb mixture; press the remaining mixture into the bottom of an ungreased 13x9 inch pan. Bake in a 350 degree oven for 15 minutes until lightly browned. Remove from the oven. Sprinkle with the chocolate chips and nuts. Sprinkle with the reserved crumb mixture(press down). Return to the oven; bake an additional 20 minutes or until lightly browned. Cool completely before cutting into bars.
